This recipe makes about 12 3 to 4 ounce servings.
Prep:
1 Large Onion Chopped
3 Carrots Chopped
2 Celery Stalks Chopped
In a stock pot, add:
- Carrots
- Celery
- Onion
- Chicken Broth
- ½ Crab Meat
- Bay Leaf
- Cayenne Pepper
- Thyme
Simmer about 30 minutes or so.
In batches, puree until smooth and return to stock pot and return to simmer
Break up remaining crab meat into small chunks and add to pot
Add bread crumbs a spoonful at a time until it starts to thicken.
Add heavy cream and simmer another 10 minutes.
Garnish with fresh parsley and shrimp.

Use ¾ Half & Half and 2 tbls of butter
