delicious sauce to top seafood, especially good on salmon
1. Season seafood normally (use some cayenne pepper to Tony Cacheres Cajun). Cook fish/seafood until lightly browned on both sides and transfer to warm platter and cover with foil.
2. Scrape any bits from bottom of pan and add the onion and red peppers. Cook over medium heat about 3-4 min.
3. Add white wine and turn up heat to high and cook until half the liquid evaporates.
4. Lower heat to medium high and add cream. Cook, stirring often, until liquid again reduces by half.
5. Add seafood back to pan, with any juices. Add the dill. Bring to a simmer and cook for a minute until warmed through.
6. Serve with sauce spooned over seafood. Like to serve on a bed a angel hair pasta.
