- Season pork tenderloins with salt & pepper
- Heat ~1.5 Tbsp cooking oil in a large oven-safe saute pan over medium-high heat.
- Add pork to hot pan and sear for ~3min on each side
- Add tomatoes to pan around pork. Cook for about 1 min, stirring tomatoes occasionally.
- Add balsamic vinaigrette with olive oil and butter. Stir to combine.
- Transfer pan to oven at 425 degrees. Roast 8-12 minutes (internal temperature 145).
- Transfer to cutting board and let rest at least 3 minutes
