15ml Chia seed-infused simple syrup
10ml fresh lemon juice
10ml elderflower liqueur
Sparkling water
Ice cubes
1 tablespoon of mixed seeds (pumpkin, sunflower, and sesame seeds), lightly toasted for garnish

Instructions:
Prepare the Chia Seed Simple Syrup:
Mix equal parts sugar and water, bring to a simmer until the sugar dissolves.
Add chia seeds and let the mixture cool.
Strain out the seeds after they've expanded and the syrup is thickened.
