Edward, Weed Seeds.
Instructions:
Chill the Glass:
Begin by placing your cocktail glass in the freezer to chill.
Prepare the Cocktail Shaker:
In a cocktail shaker, combine the gin, fresh lemon juice, simple syrup, and poppy seed liqueur.
Add the Egg White:
Crack an egg and separate the white from the yolk. Add the egg white to the shaker.
Dry Shake:
Without ice, seal the shaker and shake vigorously for about 15 seconds. This is called a dry shake and it helps to emulsify the egg white.
Wet Shake:
Add a handful of ice cubes to the shaker and shake again for another 15-20 seconds. This will chill and dilute the mixture properly.
Prepare the Glass:
Remove your cocktail glass from the freezer.
Strain the Cocktail:
Strain the mixture into the chilled glass through a fine mesh strainer to remove any ice shards or egg remnants.
Add Club Soda:
Gently top off the drink with a dash of club soda to add a slight fizz.
Garnish:
Carefully float a few poppy seeds on top of the foam.
Twist a strip of lemon peel over the drink to express its oils, then drop it into the drink or perch it on the rim as a garnish.
Serve:
Serve immediately and enjoy your refreshing and unique Seeds May Cocktail!
