Shepherds pie using leftover cut up roast
Cut up leftover beef roast as fine as you'd like it and put it in a 2 quart deep casserole dish. .
Mix in frozen vegetables of your choice. I used a cup of peas and a cup of mixed veggies.
Make gravy using the Lipton™ onion soup mix. I use the microwave. mix a bit of the 1 cup water with the T of flour in a 2 cup glass measuring cup until smooth. Mix in the rest of the water. Microwave, stirring occasionally until thickened. about 2 min.
Mix in with the beef and vegetables. Season anyway you want. I didn't use anything due to the onion mix.
Make the mashed potato flakes for 4 servings. 1 1/3 c flakes and about 1 1/2 c water mixed together. I used just water but if you want to add milk you can. I liked them a bit dry but its up to you. I mixed with a bit of garlic powder.
Put the mashed potato on top of the beef mixture to the edges.
Bake at 350º for 30 min. You can add some grated cheese on top if you want. If you do, return it to the oven until it melts.
Can be made with any meat, and any frozen vegetables. If you want it sturdier you can add 1 lb ground beef cooked.
