Cook out the minced lamb in a pan on medium-high heat with Olive oil until it starts to caramelize - 7mins, athen add in 1 finely diced onion, carrot and celery

Cook this all off for 2 mins, then add in the garlic and cook for 1 min
STEP 3
Once fragrant, add in tomato puree and the herbs, and bay leaf, mix to combine. Deglaze with 250ml of red wine.
STEP 4
Allow the wine to reduce for 2 mins, then go in with lamb, chicken or beef stock
STEP 5
Simmer on low for an hour till it's thick, then add in frozen peas
STEP 6
For the mashed potato, peel and boil the potatoes, then chop and boil till very tender - 12 mins
STEP 7
Strain, then mash and season with salt, black pepper and a few knobs of butter. Then add a dash of milk/cream, cheddar, some parmesan and combine. Once cooled, throw in the egg yolks
STEP 8
Add the cooled lamb mince into a baking dish, then top with your mashed potato and smooth out. Score a few lines with a fork, grate over more parmesan, then bake at 200c for 30mins or till the top is crisp

Let it rest for 20mins before slicing
