• 9 ounces 5 cheese tortellini
• 1 tablespoon butter
• ¼ cup finely minced onion
• ¼ cup finely chopped bell pepper
• 3 garlic cloves, finely minced
• Red Pepper Flakes to taste
• Cajun Seasoning to taste
• 1 cup white wine - Pinot Grigio is my favorite
• ½ cup heavy cream (whipping cream)
• 1 lb. shrimp
INSTRUCTIONS
1. Put a large pot of salted water on high heat.
2. Bring the pot to a boil then add the tortellini and cook according to the package directions – usually 6-8 minutes.
3. Drain the water and set it aside.
4. Melt the butter in a large frying pan over medium heat. Add the onion, peppers and garlic and cook until the onion is transparent, about 3 minutes. Add the wine and bring to a simmer.
5. Stir pepper flakes and Cajun seasonings.
6. Add the shrimp to the pan and let it cook for 2 minutes.
7. Add the heavy cream, about 1 minute
8. Add the cooked tortellini and season to taste.
