Heat the coconut oil in a frying pan. Add the sliced peppers and sliced
onion and cook on medium heat for about 8-10 minutes or until the
veggies soften and start to get crispy. Add spices depending on your
own taste. I did about 1 tsp of garlic powder and 1/4 tsp of the rest. Add
the red wine vinegar and cook for another 2-3 minutes. Add shrimp and
toss to make sure they are coated with all the good seasonings! Warm
up the tortillas on a frying pan for 1-2 minutes. Serve with toppings of
your choice and enjoy! Makes about 8 fajitas.
