1) Peel (or leave unpeeled) potatoes and chop into 1 inch chunks.
2) In a large slow cooker, add the potatoes, 2 cups of milk, 1/4 cup butter, salt, and pepper. Toss to coat the potatoes. Cover and cook on HIGH for 4 hours (or until the potatoes are tender).
3) After cooking time, check to make sure the potatoes are soft. Mash the potatoes using a potato masher or beat with an electric mixer on low speed until well blended.
4) Stir in more milk and butter until you reach the desired, creamy consistency.
Cover and keep warm on low or warm heat setting until serving time.
