Delicious, quick, and easy smash burgers
1. Rub a large cast iron skillet or griddle with a small amount of oil.
2. Form the ground beef into two quarter pound balls. Season the top with a mixture of salt and pepper.
3. Once the pan starts to smoke, place the balls of ground beef salt/pepper side down into the pan. Add salt and pepper to the other side.
4. Place a piece of parchment on the ground beef and smash it with a pot or other implement. Really smash the balls, especially around the edges.
5. After 20 seconds, flip the burgers and add cheese. Stack them, and place onto the toasted bun.
6. Dress the bun with mayo, lettuce, onion, pickles, and enjoy.
