Suggest a better descriptionHeat but not to boil. Stir and let cool. Pour brine over fish in glass or plastic bowl. Cover and refrigerate overnight. Rinse fish with cool water and place on paper towels to dry for 1 hour. Place fish on smoking rack and smoke 1-3 hours. Fish should be brown and spongy. Paint with butter and enjoy.
