A basic recipe for cooking great wings on the Traeger smoker
Start the Traeger on Smoke with the lid open until the fire is established, 4-5 minutes. Once established, set the temperature to 350-degrees F and preheat, lid closed, for 10-15 minutes. Oil the grill grate.
Meanwhile, prepare the wings. If wings are not already separated, cut through the joints with a sharp knife to separate them into drumettes and flats, discarding wing tips. Season wings with salt and pepper or whatever other spices, seasonings or rub you want to use.
Arrange wings on the grill grate and cook for 45-50 minutes, turning once to prevent the wings from sticking to the grate. Wings are done when the skin is brown and crisp and the meat is no longer pink at the bone.
Transfer wings to a bowl and toss with your favorite wing sauce, if desired. Return the sauced wings to the grill for 5-10 minutes longer to set the sauce. Serve immediately with blue cheese or ranch dressing.
