If you are looking at that rack of pork that you bought at Costco and are wondering what to do with it then you have come to the right place! It turns out that this cut is perfect for cooking on a smoker and is incredibly easy to prepare.
1. Remove the pork from its packaging and pat dry with paper towels.
2. Season the pork liberally on all sides with the dry rub.
3. Let the meat rest for 30 minutes so the rub can work into the meat.
4. Set your smoker to 225F.
5. Put the rack on the smoker fat side down.
6. Smoke the pork at 225F for two hours.
7. Baste the pork with the barbecue sauce.
8. Smoke the pork for another 30 minutes until it reaches an internal temperature of 145F.
9. Remove the meat from the smoker, slice and serve.

3/4c Paprika
1/2c White Sugar
1/4c Granulated Garlic
1/8c Brown Sugar
2 tbsp. Chili Powder
2 tbsp. Salt
1 tbsp. Cayenne
