lightly spray six 6-oz custard cup
combine crust ingreds in food processor, divide into cups, bake 7 mins
for filling: melt 1 tbsp butter in skillet, cook red onion 4-5min til tender, add wine, evaporate for 1-2min.
in lg bowl, beat cream cheese 1 minute, add onion mix and all ingreds except trout and cheddar - fold those in at the end.
divide among custard cups. bake for 18-20min until filling is set. cool 10 mins, invert and serve warm
