1. Sift together flour, baking powder and salt in a mixing bowl
2. Cut in shortening until a flaky meal is formed
3. Pour in water all at once and mix dough quickly with a fork. Dough will be uniform, soft, moist and a little sticky
4. Heavily flour a bread board and knead the dough gently by folding in half, patting down and folding again. Fold no more than 12 times. The dough should still be very soft, but no longer sticky.
5. Cover dough or place in a plastic bag and refrigerate overnight. (if in a rush, this can be 15 minutes at room temperature.)
Day 2
6. Heat 1-2" frying oil to 400 in a deep saucepan
7. Divide dough in half. Roll each half gently with a rolling pin until ~10x5 rectangle. Cut into triangles.
8. Fry until brown on both sides (flipping gently halfway through cooking)
9. Drain on paper towels and serve immediately with honey or cinnamon sugar.
