Note: this recipe can be made in a slow cooker also, just add all the ingredients to the cooker except the olive oil and chicken. Cook on low for 4 hours or more. Then add the chicken about 1/2 hour before serving so that it can warm through. Either way this soup is fast to assemble and really good.
1. Heat oil in Dutch oven over medium heat until shimmering. Add onion, carrots and 1 teaspoon of salt and cook, covered, stirring occasionally, until softened, about 5-7 minutes. Stir in garlic, cumin and oregano and cook until fragrant, about 1 minute. Stir in broth, chiles, hominy, tomatoes and enchilada sauce. Cook until hominy has softened, about 15 minutes.
2. Stir in chicken and cook until heated through, about 2 minutes. Off heat, stir in cilantro or parsley if desired and 1 tablespoon of the chile brine. Season with salt and pepper to taste and serve with lime wedges, tortilla chips, sour cream, shredded cheese, etc.
