Sourdough bread starter from northern CA

FOR BREAD:
1. Mix all ingredients together. Let stand for 15 minutes.
2. Fold dough. Repeat 3 more times at 15 minute intervals.
3. Continue to let stand folding every hour, about 4-6 times. Place in refrigerator overnight.
4. Next morning, set the oven to 450 degrees and put dutch oven with lid on in the oven while it is heating up. Flour board or counter top.
5. Turn out dough. Spin and fold under until you form a nice 1/2 ball. If using a small (24 ounce) dutch oven cut into 1/3 or about 10 oz each.
6. Once oven is at temperature remove dutch oven. Place a piece of parchment over dutch oven. Place dough over parchment. It will fall into dutch oven. score dough.
7. Bake covered for 25 minutes. Bake another 25 uncovered. If using a small dutch oven (24 oz.) adjust time to 15/20.
