Proof on counter until double in size -- 3-4 hours
Move to refrigerator for 1-2 days
COOKING
Place pizza steel on top rack of oven and preheat on highest broil setting for 30-60 minutes
Pull dough from bowl and place on floured work surface skin side down
Using hands, work into large round and place on parchment paper
Add sauce and toppings
Cook on highest broil setting for 3-4 minutes
