2. Stir in garlic &curry powder, cook 1 min
3. Add parsnips, sweet potatoes, rutabaga, diced tomatoes &coconut milk. Bring to a boil, then simmer, partially covered 30min.
4. Stir in cashews & season -cool
5. Line a 9" pie plate with pastry - add cooled filling - top with pastry, flute & vent, add egg wash
6. Bake at 375° for 30-40 min.
Allow to rest 10 min
