Sean Brock's ace recipe
-Mix flour and butter in bowl (pea sized balls),
-Add buttermilk and fold with hands, (don't over work)
-add S & P and continue to knead dough briefly on floured tabletop
-Fold dough over itself a few times adding flour as needed (ap flour)
-Brush baking pan with melted butter
-Stamp out biscuits with cutter place barely touching each other (they hug each other and push each other up)
-Brush tops of biscuits with butter and bake at 425 for about 15 minutes
-Brush biscuits with butter when they come out of oven
don't over mix
