This is a nice corn side dish with amazing flavor.
In a large skillet add coconut oil, onion, diced peppers, bacon, ham, and chirizo until onions are slightly browned. With slotted spoon, remove contents leaving just the oil and put in a bowl for later. Now dump in entire bag of corn (or if your got corn from cob, dump that in) On medium heat stirring frequently, let the corn caramelize but not burn. Once that is done, return previous ingredients to the pan with the corn. Stir and tumble frequently to avoid burning. Let that cook covered on low heat to mix in the flavors. Add salt, pepper and Cilantro and let cook for 5 more minutes. Enjoy the smiles on everyone's faces.
