Heat oil in large skillet over medium high heat. Brown chicken on all sides and place in slow cooker.
Add onions to skillet, cook and stir until translucent. Stir in garlic, sausage, tomatoes and rice, chicken broth and saffron. Pour mixture over chicken.
Cover and cook on HIGH 3 to 4 hours or until chicken and rice are tender. Remove chicken pieces to platter and fluff rice with fork. Stir in peas. Spoon rice onto platter with chicken.
