Mix flour with seasoning and lightly toss to coat
Heat oil and butter in pan until foaming
Add shallots
Cook on low heat for 3/4 mins
Add mushrooms and cook on high heat for minute, remove from pan
Add beef and cook until lightly browned
Pour over brandy and flame
When died down add mustard shallots and mushrooms
When cooked remove from heat and stir in soured cream
Serve with rice or noodles
