Scrambled eggs with spinach and onions
In a non-stick saute pan, melt butter medium-low heat
Add onions and saute in pan until they are just starting to turn translucent.
Add spinach to onions, cover, and continue heating until spinach has wilted.
Add beaten eggs to spinach and onions, stirring constantly until eggs are set to desired firmness.
Serve immediately.
