Cook rice according to package directions.
Press spinach between paper towels to remove excess moisture.
Combine rice, spinach, and remaining ingredients. Spoon into a lightly greased 2 quart casserole dish. Bake uncovered at 350F for 35 to 40 minutes.
You may assemble casserole, cover & chill a day ahead. Remove from frig, let stand at room temperature for 30 minutes before baking.
