Suggest a better descriptionHeat half of the oil over medium heat in a large skillet. Add the garlic and cook until soft. Add the spinach and cook until just wilted, season with salt and pepper to taste and stir in the lemon zest. Heat the remaining oil in a medium saucepan over medium heat. Add the onion and cook until soft. Add the rice and stir to coat with the oil. Add the stock, bring to a boil, stir once, cover and cook until done, 12-14 minutes.
