Add all of the above in large skillet. Saute onion first in butter. Cut Zucchini and squash in bite size pieces (nice size they will shrink). Throw all in skillet and add 1 can of cream of mushrooms soup. Add some spices like garlic and pepper, salt. Spray casserole dish with Pam and add mixture. Top with Colby Jack shredded cheese and top with shaved Parmesan cheese. add bacon pieces. Bake for 30 minutes at 350 degrees
Go a little crazy with the spices, what ever you like with squash.
