First make the pickle
Mix everything in a bowl separating the onion pieces.
Deal with skirt steak
Make sure all sinew is removed
Slash diagonally partway through both sides of the meat
If the meat is thicker at one end than the other place it between two layers of clingfilm and bash the thick end to even it out
Mix all the steak ingredients except steak and oil in a bowl, rub the mixture into the steak, you can leave this to marinade
Heat the oil in a frying pan medium to medium high heat.
Cook for about four minutes each side.
Rest for a few minutes then thinly slice across the grain
Assemble and enjoy.
