How to make fresh pork buns
1. Combine the yeast and water in the bowl of a stand mixer with dough hook. Add the flour, sugar, milk powder, salt, baking powder, baking soda, and fat and mix on lowest speed possible for 8-10 minutes. The dough should gather together neat, not too tacky ball on the hook. When it does, lightly oil a medium mixing bowl , put the dough in it and cover with a towel and let rise in a warm place for 1 hour and 15 minutes.
2. Punch the dough down and turn out on a clean work surface. Divide in half and then each half in five pieces, each piece into a log and each log into five pieces (50 buns) make all pieces into balls and cover and let rise 30 minutes
3. cut 50 squares of 4 inch squares of parchment paper and then roll all balls into discs and fold halway using chopstick to create the fold center and let buns rise yet another 30-45 minutes
4. Get the steamer ready and steam all buns for 10 minutes and then that they will be ready to fill or to refrigerate or freeze
