These are good
Separate legs from thighs. Rinse and cover with water. Simmer 1.25 to 1.5 hours until tender.
Melt margarine in skillet. Saute onions in margarine until transparent. Add flour and blend well. Add hot chicken stock stirring constantly. Cook 10-15 minutes, stirring occasionally. Add seasonings. Prepare dumplings. Serve sauce over chicken. Place 1 cooked dumpling on top of each serving.
Serves: 12 (1 leg, 1 thigh, 4 oz sauce and 1 dumpling per serving)
Dumplings:
Mix dry ingredients. Mix eggs and milk. Add milk mixture all at once to dry ingredients. Mix until well blended. Blend in margarine. Drop 12 (1.5 oz ea) dumplings with scoop onto greased sheet. Steam (place a pan of water underneath sheet. Heat water in pan. Cover dumplings) 10-12 minutes, or until set and done in middle. Do not open while cooking. Serve immediately. Dumplings get cold and soggy quickly. Serves: 12 dumplings
