Preheat oven to 375. Line a cookie sheet with aluminum foil.
Mix together cream cheese, sugar, lemon juice and vanilla until it is creamy and there are no lumps.
Unroll crescent rolls. On the fattest part of the triangle spoon 2 tsp. of cream cheese mixture and 1 tsp. strawberry jam. Roll making sure the fattest part of the crescent roll is on the bottom of the pan so the filling doesn't ooze out.
Whisk together egg white and water. Brush over each crescent roll.
Bake 9 - 10 minutes until rolls are golden brown. Sprinkle with sugar if desired.
