Very easy and tastes just heavenly. Great for dipping, topping a cake or cupcakes. It is very light and fresh. You can use any fruit you like in lieu of strawberries. I did find this online, but tweeked it a bit.
Beat the heavy whipping cream with an electric mixer on medium until it begins to look like whipped cream (about 5-10 minutes).
Continue beating the cream while gradually adding the sugar.
Continue beating the mixture while adding the pureed strawberries. Beat until fully incorporated.
Beat in the vanilla extract until fully incorporated.
Ready to serve.
Yields about 2 cups (enough to generously cover a 9-inch cake).
Put in covered bowl in the fridge for an hour or more to get a more chilled firmer frosting.
