Suggest a better description1. Cut tops off the peppers and set aside. Clean out the seeds and inner parts of the peppers. Line up peppers in an 8x10 or 9x13 baking pan. You want the peppers to fit snuggly so they don't fall over.
2. Mince the edible parts of the pepper tops and put into frying pan with diced onion, about 1tbsp of olive oil, and a pinch of salt. Saute until soft and golden. Once cooked, put into large bowl and set aside.
3. In same frying pan, brown ground pork with a pinch of salt. Once meat is browned, add minced garlic and cook until garlic is browned (about 3 minutes). Add cooked meat to the onion pepper mix.
4. Add 2 cups of cooked rice to the bowl.
5. Rinse black beans thoroughly and add to bowl.
6. Cook corn in microwave and then add to the bowl.
7. Add half the jar of salsa into the bowl to create the filling mixture. Stir gently until everything is combined. The mixture should be moist, but not soupy. Add more salsa it needed.
8. Scoop filling into the hollow pepper, packing the filling down a little to stuff them fully.
9. Cover pan with foil and cook in a 400° oven for 45 minutes. Uncover and cook another 10 minutes. If using cheese, sprinkle on top when you uncover and cook for the additional 10 minutes.
10. Serve with guacamole, sour cream, salsa, or any of you favorite toppings or garnishes.
11. Optional variation, skip the hollow pepper bowls and serve filling with lettuce leaves to make lettuce wraps.
