Big soft sugar cookies, delicate and not too sweet
*note*--use 1 Crisco Stick, white NOT butter-flavored
Preheat oven to 375. I use parchment paper on cookie sheets for this.
Stir together flour, baking soda and baking powder, set aside.
In very large bowl beat together (with electric mixer) shortening, sugar, eggs and vanilla. Alternately blend in flour mixture and buttermilk until all combined. Texture will be like pudding. Drop by large spoonfuls (size of large egg) onto prepared cookie sheet. Leave lots of room for cakes to spread, 4 to 6 on cookie sheet at a time. Sprinkle with colored sugar if desired.
Bake 8 to 10 minutes or until lightly golden brown. (Do not underbake as cakes will have "raw" centers if not baked enough). Cool on rack and store tightly covered as they get stale in a few days, if they last that long.
