This is a mildly sweet dish that goes perfecvt with glazed ham.
Spray a medium-sized oven-proof dish with cooking spray. Place slices
from 20 oz. can of pineapple on bottom of dish. (You may make more than one layer or use the sides, if needed.) Sprinkle evenly with 1 cup shredded Cheddar cheese. Combine the 1/3 cup reserved pineapple juice, 2/3 cup sugar, and 1/2 cup flour in a small bowl. Stir until completely blended. Combine about 1 cup butter cracker crumbs with 1/2 stick melted butter or margarine.
Sprinkle the buttered crumbs over the top of the pineapple and sauce mixture. Bake at 350 degrees for about 20 minutes, or until bubbly and browned on top. This is a dish that looks elegant with any menu and goes particularly well with ham or pork chops. I love to serve it to guests and wait for compliments! They are always impressed!!!
