From the Lee Brothers Southern Cookbook.
1. Place shrimp shells, onion, celery, parsley and bay leaves in medium stock pot. Add the water and wine and bring to vigorous simmer over high heat. Turn heat to low and simmer gently for 45 minutes.
2. Strain broth into a bowl through a fine mesh strainer. Discard solids. Measure the amount of both you are left with (3-4 cups). Taste it. If you don't plan to reduce more, season it with shrimp boil or salt and pepper. Stat with a 1/4 teaspoon of shrimp boil per 1 cup of broth.
3. Store broth in refrigerator if you Plan to use within 2 days. If not, store in freezer for up to 1 month.
