1. Sift flour once, measure; add salt; sift again
2. Add combined egg yolks and water; mix well
3. Knead on lightly floured board until smooth
4. Divide dough into 4 parts and roll each separately until paper thin.
5. Allow the sheets of dough to stand until partially dry, but not dry enough to crack when cut
6. Pile sheets of dough on each other and cut strips in width desired
7. Separate noodles and let dry 30 minutes
8. Drop into rapidly boilung, salted water and cook 10 to 15 minutes
9. Serve with melted butter or about 1/2 cup fine brown bread crumbs which have been mixed with melted butter
Note: the uncooked noodles may be stored in a dry container in a cook, dry place until needed
