Suggest a better descriptionPrepare your custard: In your blender: add your eggs, sweetened condensed milk, heavy cream, vanilla & orange extract. Blend for about a minute until smooth and then set aside.
Preheat oven to 350 deg F.
Take your sugar and heat over a low heat. Watch it carefully. Shake the pan occasionally but do not stir. You're looking for a nice amber color (light brown). On low and slow heat, this may take about 15 minutes. You're wanting the nice amber color, but still pourable and not the hard candy stage. Pourable so that you can pour it and it will spread on the bottom of your pan.
While caramel is slowly browning, heat a pan by pouring hot boiling water into it. Once heated, pour water out & then dry pan. Your pan should be warmed and ready for your caramel. Once caramel is ready, pour into a pan & swirl around to cover. Immediately be ready with custard from the blender and pour over caramel (but through a sieve first). Pouring the custard through the sieve will yield a smoother, silkier custard.
Transfer the flan pan into a larger dish. Cover flan with foil and create a water bath around the flan by pouring boiling water around the smaller pan. Transfer flan to oven and bake for 55-60 minutes or until flan is set, but still slightly jiggly. Let cool on countertop or fridge. When ready to transfer to a dish to serve, run a knife along the edges. Carefully invert the flan onto a larger serving dish that has a lip. The lip is necessary as the caramel should be runny and the lip will catch the extra caramel sauce.
