Suggest a better descriptionBeat eggs and set aside. In a small skillet brown the ground turkey, onions and peppers over a medium heat. I usually use a mixture of green, red and yellow peppers. I often add a touch of garlic, also. Brown until the turkey is cooked through and vegetables are tender. Add mushrooms and tomatoes. Add seasonings, to taste. Cook an additional 2 minutes, stirring often. Pour beaten eggs over meat and vegetable mixture, stirring to blend well. When the eggs are about set, stir in the spinach and continue to stir until spinach is wilted. Even out in the skillet, sprinkle with cheese, and cover. Remove from heat and let set about a minute. Serves 1
