Easy, creamy and delicious over egg noodles, mashies or spatzel.
In a large bowl, mix the first 11 ingredients, by hand, until well blended. Divide the mix into 32 equal portions. Wet your hands and roll each portion into a meatball. Rewet your hands as necessary. Place the meatballs on a rack.
Put the 1 tablespoon of oil in your IP and heat it on sauté setting. Sauté the meatballs in batches, until browned. Drain them on a rack, set over a sheet pan. Set them aside.
Add the mushrooms to the pot and sauté them for a minute. Whisk in the flour until it turns light brown. Stir in the Bouillon and water, to deglaze your pot. Salt and pepper to taste.
Return the meatballs to the pot. Manually set the pot to high pressure for 8 minutes. After the timer goes off perform a quick release.
Remove the meatballs from the pot and cover them with foil to keep them warm. Turn pot to sauté and cook the sauce, stirring, until it is thickened. Stir in the Sour Cream just before serving.
Serve immediately with the meatballs. Garnish with the Fresh Dill and Parsley if you desire.
