Warm sweet potato casserole with brown sugar crumble. Excellent dish for Christmas or Thanksgiving.
Preheat oven to 400°F
Peel sweet potatoes and cut into 1 inch cubes
Cook sweet potatoes in a large pot of boiling water until tender. Drain and transfer to a large mixing bowl.
Add room temperature butter and beat until smooth.
Add egg, sugar, spice and salt and beat to blend.
Transfer mixture to an 8 x 8 baking dish. Bake potatoes until they begin to brown around the edges and become slightly puffed (about 25 minutes).
Meanwhile, prepare the topping.
Mix together crushed cornflakes, brown sugar, pecans and melted butter.
Spoon topping evenly over the potatoes and then continue to bake until golden brown and crispy (about 10 minutes longer).
