Food Babe Friday night suggestion
Preheat oven to 450.
Heat coconut oil in a skillet and cook red onion until tender and brown.
Lay two tortillas on a baking rack. Spread the potato over tortillas and sprinkle spice, salt and pepper on top. Lay the onions on the potato, along with the greens and goat cheese on top. Top each with another tortilla. Spray the top tortilla lightly with olive oil.
Bake for 10-12 minutes, watching carefully that they don't burn.
Remove from oven and cool for a couple of minutes. Use a pizza cutter to cut into slices.
