2. Cut potatoes in half n cool for 5-10 mins
3. Sauté shallots with butter until translucent
4. Add fresh spinach to heat for 2-3 mins
5. Scale out potato leaving thin layer
6. Mash up potato with cream cheese and sour cream
7. Stir in chickpeas spinach salt and pepper
8. Cost potatos with oil and bake for 5 mins
9. Remove from over and fill with mixture and top eighth mozzarella cheese
10. Bake for 10-15 mins
