Suggest a better descriptionPreheat the oven to 350°. In a large pan, bring 2 cups of water to a boil, add the sweet potatoes, cover and cook until tender. Add the onion and peppers. Return to a boil.
Add the taco seasoning packet, stirring until well mixed. You may need to add a bit more water. Remove from heat.
Warm the taco shells in the oven for 5-7 minutes. Fill and serve topped with salsa and avocado.
