This recipe is a easy delicious vegan breakfast idea, which is very versetile and only uses 4 basic ingriedients that can be paired with anything you like. You can make the pancake batter the night before to save time and make the pancakes the next morning or you could just make them from scratch right in the morning. Serve the pancakes wth your favorite fruit and/or toppings such as nuts, syrups or even non dairy yoghurts. This breakfast is very delicious and takes around 25 minutes to prepare and cook everything, so it is more of a weekend type of breakfast
STEPS:
1)Place the oats in a blender and blend until a flour forms.
2)To the oat flour add the almond milk,the banana and the cinamon and blend until a pancake batter forms. Next mix in a handful of blueberries into the batter.
3) Heat up a non stick pan and place 2-3 tbs of batter onto the pan and spread it around into a pancake shape. Let the pancake cook for 1-2 minutes on one side and then flip over and cook for another minute.
4)Stack the panackes on a plate and I recomend spreading some of the peanutbuter between the pancakes and drizzling the rest on top. Serve the pancakes with the figs and blueberries, and add on the nuts and sprinkle with cinamon.
