This is a casserole that combines taco meat and potatoes. the combination gives a unique taste and is fulfilling .
preheat oven to 350
in medium pan combine ground meat, onion,seasonings,and tomatoes over medium heat until cooked.add cream cheese and heat till combined thoroughly. add mixture to a 13x9 baking dish and then add 2 cups of the colby jack cheese and the velveta.place in oven for 20 minutes.
remove from oven and add the instant potatoes and top with rest of the cheese .sprinkle bread crumbs over the top and broil an additional 2 minutes in the broiler.
slice the velveta into strips before placing on top of ground meat to ensure even melting
