Pulite i funghi eliminando la parte terrosa del gambo e strofinandoli delicatamente con uno strofinaccio umido quindi affettateli. Sbucciate e tritate gli scalogni. Sbriciolate la salsiccia e rosolatela in padella con l'olio e gli scalogni; dopo qualche minuto aggiungete i funghi e cuoceteli al dente. Al termine della cottura, salate, spolverate con prezzemolo tritato e con pepe macinato all'istante. Cuocete al dente i tagliolini, scolateli e versateli in una zuppiera. Condite con il sugo di funghi e servite con a parte il parmigiano.
