Season the ground meat with salt, pepper, 5spice powder, sesame oil, garlic and onion powder, and 2 tablespoons coconut aminos. Mix well and set aside in refrigerator.
In a large skillet, add two tablespoons oil (avocado oil is best), and sauté garlic, shallots, ginger, white part of scallions, and red pepper flakes, along with a pinch of salt. Sauté until fragrant, about a minute. Stir frequently so they don’t burn.
Add seasoned meat and break it down to smaller pieces. Cook for about 3-5 minutes. Season with another pinch of salt. Add chicken stock, tomato paste, 4 tablespoons coconut aminos, dates, shiitakes, and bamboo shoots. Stir.
Simmer on low for about 15 minutes.
Serve over pasta, cauliflower rice or other.
