Suggest a better descriptionThe day before you plan to serve this dish, discard the giblets frofem the hens or save them for another use. With a sharp knife, make a slash down the center of each hen's breast half and down each leg. Rub about 1 tablespoon of the tandoori paste into the slashes and all over the front and back of each hen. Place the hens in a very large bowl and spread 2 cups of the yogurt over the hens. Toss to completely coat the hens in yogurt. Cover and refridgerate for 12 to 24 hrs.
In a small bowl, mix together the remaining 1 cup yogurt with 1 tablespoon of the remaining tandoori paste and a large pinch of salt. Refrigerate until ready to use.
When you are ready to cook the hens, preheat the oven to 400F.
Scrape off and discard all the marinade from the hens and pat the hens dry with paper towels. Rub each him with a thin layer of the remaining tandoori paste to cover completely. Place the neds on a 2 rimmed baking sheets and bake for 25 minutes. Remove the hens from the oven and baste them with the pan juice.
Preheat the broiler. Remove the tandoori-yogurt sauce from the fridge to let it return to room temp.
Place the hens under the broiler, and 6" from the heat, for about 2 mins or longer, until blackened in many spots. Remove the hens from the broiler. Remove the skin from the hens. Transfer the hens to a serving platter, pour any pan juices over the hens, and sprinkle them with salt. Serve with the reserved tandoori-yogurt sauce.
